The eye buttons hide and show the Red, Green and Blue channels, and clicking a channel shows it alone in greyscale, with RGB returning to the full-colour image. Ctrl+1/2/3 and Ctrl+~ switch channels. It only changes what you see on screen: saves, exports and undo history stay full colour.
